What is Maraş ice cream?
Maraş ice cream (dondurma) is a Turkish ice cream made with milk — traditionally goat's milk — sugar, salep and mastic.
Salep is a flour made from orchid roots. Together with mastic resin it gives the ice cream a dense, chewy, stretchy texture that melts slowly.
The ice cream is beaten and kneaded with long metal paddles, which brings out its famous elasticity.
The vendors' playful teasing show is a well-loved street tradition: in the end, everyone gets their cone — and a smile.
